Janelle created this easy gluten free bacon and asparagus stir fry recipe some time ago, as a way of featuring asparagus and using up other ingredients she had floating around in the fridge!
It is a yummy, tasty dish, and although it doesn’t rate too highly with some of the children here, the promise of dessert afterwards (they don’t get dessert everyday) makes it go down!
You can vary the ingredients – ham instead of bacon, broccoli can be added or used instead of one of the other ingredients, or just use what ever you find in your fridge! If you need a dairy free version, omit the parmesan cheese.
Ingredients:
- Potatoes
- Mushroom
- Asparagus
- Capsicum
- Garlic
- Bacon (if it is packaged, make sure it is gluten free)
- Balsamic Vinegar (check if it is gluten free)
- Parmesan Cheese (check if it is gluten free)
Slice vegetables and chop asparagus into sections. Fry garlic, bacon and potatoes in a large frypan (you may want to leave the bacon until a little later so it doesn’t get overcooked) and cook until potatoes are almost cooked. Add mushrooms, asparagus and capsicum, and a dash or two of balsamic vinegar.
Serve immediately with shaved parmesan cheese (not pictured).
