This easy, gluten free sausage casserole is dairy free too, and has a lovely tomato based sauce. Serve it with mashed potato and vegetables. Comfort food… great on a cool night and it will warm your insides.
- Sausages (make sure they are gluten free)
- Onion, sliced
- Mushrooms, sliced
- Tin of chopped tomatoes
- Tomato paste (check to make sure it is gluten free)
- Worcestershire sauce (check to make sure it is gluten free)
Place sausages in a greased casserole dish. Lay sliced onion and mushroom over the top of the sausages, then pour mixed tinned tomatoes, tomato paste, Worcestershire sauce, garlic, water and herbs over the top.
Cover and place in a preheated oven (180 degrees) and cook for 40-60 minutes.
Meanwhile, peel potatoes and cook (we cooked our vegies in the microwave) until soft. Mash with a little margarine and milk. Remove sausages from the oven when ready and serve with cooked carrots and peas and mashed potato. Yum!
